En 1944, en los estudios de Lausanne, grabó el dueto
Dal tempio al limitar con el barítono Luigi Marchiò y Henri Ottone al piano.
Debutó el papel en 1946 en Venecia. Ese mismo año graba la bellísima romanza de Nadir (en italiano,
Mi par d'udire ancor), con Edoardo Moser acompañando.

Timbre simplemente glorioso. Cantado, además, con total naturalidad.
Exquisito el
Divin sovvenir del final.
Uno de los mejores registros del joven Pippo.
Vuelve a cantar Nadir en 1947, 1950 y 1953.
En 1957 graba un bellísimo disco de duetos con la soprano Rosana Carteri. Entre ellos, el dueto Nadir-Leïla:

Pippo no estaba en buenas condiciones vocales, la voz suena forzada y el agudo final es bastante feo.
Finalmente, en 1974, vuelve a grabar el dueto, esta vez en francés, en las grabaciones de duetos con Montserrat Caballé. Fue un disco que se grabó para recaudar fondos para tratar la enfermedad de la hija de Pippo.
Su voz estaba completamente destruída y la pobre Montse hace lo que puede.

WILHELM MEISTER
Es el protagonista de la ópera de Ambroise Thomas,
Mignon. A pesar de ser una ópera medianamente conocida, las arias de tenor, pese a ser bellísimas, no son tan famosas como aquellas de los personajes de Mignon (Connais-tu le pays) o Philline (Je suis Titania).
Di Stefano grabaría las dos arias de Wilhelm para EMI en 1947, ambas bellamente cantadas en italiano:

En abril de 1947, debuta el papel en Roma y en octubre, lo interpreta en La Scala junto a Giulietta Simionato (en las funciones que la catapultarían a la fama). Unos días más tarde, ambos la cantarían en Torino.
En diciembre de 1948, lo canta por primera vez en el MET, acompañado por Risë Stevens y Patrice Munsel. Aquí, una crítica que se conserva:

Mr. Di Stefano possesses one of the most attractive tenor voices at the Metropolitan, though its volume is decidedly limited. In Mignon, however, the young artist was only half effective most of the time. He may never have sung the role of Wilhelm Meister before, and he almost certainly had not sung it in French. The second-act aria, "Adieu, Mignon," had scarcely more than occasional agreeable moments. By the time his third-act opportunity, "Elle ne croyait pas," came along, he was more sure of himself, and gave some indication of the caressing vocalization his audiences hope he may be able to achieve in another year or two. It will probably take him longer to learn to act, for he displayed hardly more than the barest rudiments of the craft.

One of the Metropolitan's hidden assets came to light last night as Giuseppe di Stefano sang Wilhelm Meister in "Mignon" for the first time anywhere in French. Though this is a tantalizing part for a tenor, with the ever present prospect that he will burst into sustained song only occasionally fulfilled, di Stefano left but one question unanswered-why had he not sung it previously, especially in the broadcast'?
It was, altogether, a disarming piece of work, and in the "Addio" and "Romance," a thorough delight to hear. Di Stefano had himself much more in hand than at his few brilliant but uneven performances last season: moreover, he had his voice completely at his disposal, the pure open top, the warm resonant middle a vocal paradox in these days of tight, over-driven tenors. There were bravos for him both opportunely and inopportunely; plus the unspoken ones of a few for the virtues that were more than vocal -- his good bearing, good manners and good looks. If they continue to go together his future is assured.

The most exciting singing was done by Giuseppe di Stefano, one year older and several pounds more substantial than when he sang Des Grieux here last season within the first few months of his American arrival. At twenty-seven the young Italian tenor has not yet matured artistically, but he shows increasing volume and more expressiveness and definite gains in security and authority. Mr. Di Stefano is the most promising of the postwar tenors of his school with a voice of bright color, flexibility and easily soaring range. If pasta and antipasto don't get him, he is a romantically personable figure.
Con la compañia del MET, llevaría su Wilhelm por varias ciudades de los Estados Unidos.
Finalmente, y de nuevo acompañado por Giulietta Simionato como protagonista, canta tres funciones de Mignon en Ciudad de México.
Éstas fueron extraordinarias, según los comentarios, y contribuyeron a la adoración de ambos artistas en ese país.

El 23 de diciembre de 1949 debuta el papel en el MET. El 31 del mismo mes, se transmite la siguiente función, de la cual, afortunadamente, nos queda registro:

Salut...; con el hermoso diminuendo en el agudo hasta llegar a un pianissimo. Rudolf Bing dijo que ese era el sonido más bello que había escuchado en sus años como director del MET.

Luego de esa función, llevó su Faust de gira por gran parte de los Estados Unidos, alternándose con artistas como Licia Albanese, Robert Merrill, Enzo Mascherini, Frank Guarrera, Robert Weede, Jerome Hines, Nadine Conner, Cesare Siepi, Victoria De Los Ángeles, Eleanor Steber, etc.
En 1950, da un concierto en San Francisco con Bidu Sayao, con Gaetano Merola a la batuta. Junto con otros conciertos (con Lily Pons y Renata Tebaldi), sus intervenciones fueron publicadas en una recopilación:

En 1954 vuelve a cantar el papel, esta vez en México (con Irma Gonzáles); y en el '55, regresa a cantarlo al MET, acompañado por Jerome Hines y Dorothy Kirsten. Esta es una crítica de esa función:
